Day gazillion of the Quarantine,
I’ve been cooking a lot, as I’m sure so are you at home, so today I’m gonna give you a recipe I make myself. It’s one of my favorite meals, and guess what it’s veggie-friendly, and vegan-friendly as well. I’m gonna bring you down the beautiful road of Broccoli Pasta.
Broccoli Pasta is just so heart-warming, and it’s also amazingly good. Plus I don’t know if you guys watch Terrace House, but it’s also a little homage to Ruka. If you watch it you know what I’m talking about.
So, what do you need to make Broccoli Pasta?
Yep, that’s pretty much it. I’m not gonna give you the whole you need salt or pepper as well, cause that’s in how to go about and doing it.
Let’s start by cutting the broccoli and putting it into a pot filled with water as you can see in the picture above. You’ll let it boil for at least 30 mins.
Now, what are you going to do in the meantime? Well, you can take a pan, put some oil at the base, and crush two cloves of garlic. Pop them in that oil and simmer the cloves until they are golden. Once they’re golden turn the fire off and scroll your social media waiting for the broccoli to finish cooking, or you can do like me and get the Moka ready.
Once your timer goes off the broccoli should be ready (you’ll know this from how hard the veggies are, if they are still hard, wait another 15 mins).
At this point move the broccoli to the pan where we simmered the garlic. Cool? Now, this is very important. DO NOT THROW THE BROCCOLI WATER OUT. You’re going to use that to cook the pasta. It’s going to give that extra broccoli flavor to your pasta.
While you keep cooking the broccoli with the garlic, my advice is to put two teacups of your pasta water into the pan as it’s cooking, it’s gonna make it nice and mushy. Salt as you need, remember that when you’re putting water in the pan it’ll kill the saltiness you tasted up to that point. So, wait towards the end to salt your broccoli.
You know how to cook pasta, maybe not, but the same I’m not gonna tell you that, once the pasta is ready, sautè it in the pan with the broccoli and…Buon Appetito!
